Spinach And Mushroom Salad

8 Oz. fresh spinach -- washed, trimmed and
towel dry
2 oranges
2 Tsp. whole grain mustard or
1 Tsp. Dijon mustard
1 Clove garlic -- crushed
1 Tsp. sugar
2 Tbsp. lemon juice
6 Tbsp. sunflower oil
-- (safflower or olive
oil, okay)
salt and freshly ground pepper
2 avocados
8 Oz. button mushrooms -- sliced


Shred the spinach leaves into small strips and place in
a bowl; set aside. Peel oranges and with serrated knife, cut
away skin and pith, cut oranges into segments, removing
membrane and discard seeds. Whisk together mustard, garlic, oil,
lemon juice, sugar and seasoning to taste until well
emulsified. Halve the avocados and remove pits. Peel and cut
avocados into even size chunks. Place the oranges, avocados
and mushrooms on top of spinach. Place salad and dressing
refrigerator until ready to serve. Pour dressing over salad.
Carefully mix together; sprinkle with croutons and serve
